Rocky Road is the stuff childhood dreams are made of. The crunchy biscuit surprise as you bite into the sticky chocolate square, the stringy marshmallow that stretches like melted cheese tightropes to your mouth. It’s hard to imagine a world where kids don’t get to experience this delight.
Mine will, but later on and in moderation – I think it’s accepted that I’m going to be a total sugar Nazi in her early years! She’ll get to enjoy the crunchy biscuit and stretchy marshmallow, but only once she’s grown used to the taste of a healthier version. So, like all other sugar-laden confections, it becomes an occasional treat rather than a household standard.
Teaching kids healthy eating habits from an early age is one of the best gifts you can give them. Plus you also benefit from having nourishing sweets in the house instead of reaching for that pack of Oreos. Winning all round.
Healthy Rocky Road
- 3/4 cup coconut oil, melted
- 1/2 cup cacao or carob powder (I prefer cacao but I only had carob this time…it makes it a bit sweeter)
- 1 1/2 cups dried dates, soaked in water for 3 hours
- 1 tsp cinnamon
- 1/2 tsp sea salt
- 1/2 cup puffed brown rice
- 1/2 cup coconut flakes
- 1/2 cup raw walnuts
- 1/4 cup goji berries
- 1/4 cup dried cranberries
- Combine coconut oil, cacao/carob, cinnamon, salt and dates in a food processor. Process until it forms a smooth, sticky batter.
- In a large bowl, combine puffed rice, coconut flakes, walnuts, cranberries and goji berries. Pour the batter over the dry ingredients and stir to combine.
- Spoon the mixture into a greased pan and place in freezer to set for 30 minutes.
- Remove from freezer and slice.
- Store in the freezer and eat ‘frozen’ – they won’t actually be frozen, but this keeps the consistency similar to real rocky road. If you keep it in the fridge, you’ll get a gloopy slice that sticks to your hands.
